When a German chef is appointed head of the Chinese national culinary team, there must be a special story behind it. This is the case with Stefan Stiller. Born in Hildesheim, he has lived in Shanghai since 2004, where he runs the “Taian Table,” one of two three-star restaurants in the 26-million metropolis. Before the now 57-year-old moved to China, he learned the kitchen trade in top German restaurants. After two stints as an employee in Shanghai top restaurants, he became his own chef in 2007, first at “Stiller’s Restaurant”, then in 2016 at the “Taian Table” restaurant, which he opened in a converted department store. After only five months, he received his first Michelin star - but was forced to close a day later because the restaurant did not exactly meet all the regulations. This incident did not stop Stefan Stiller:

A short time later, he reopened the restaurant in a new location and ascended to the Michelin Olympus with three stars. In responding to this distinction, he consistently focuses on top European cuisine with Asian influences. The team keeps pushing the boundaries of skill and creativity with a brand-new tasting menu every six weeks, capturing each season’s unique spirit and energy.

Furthermore, his “Taian Table” branch in Guangzhou with two stars, which opened in 2021, is one of the top restaurants in this city of 15 million people, and he also runs the one-star “Stiller Guangzhou” there. His training kitchen for the Chinese Bocuse d’Or competition team is also based in Guangzhou. Under his leadership, the team reached the world finals of the “Asia-Pacific Continental Selection” no fewer than four times.
