Julien Royer is an award-winning chef and the co-owner of the three Michelin-starred restaurant “Odette” in Singapore. The son of farmers was born in Cantal, France, where, as a child, he already learned to value nature in all its diversity. He has retained this deep connection to this day. In addition to the “Odette” restaurant, Julien Royer is the chef patron of the restaurant “Claudine” in Singapore and the founder of the Michelin-starred restaurant “Louise” in Hong Kong. Thanks to close relationships with the best farm boutique producers around the world, the top chef can offer his guests exceptional ingredients of the highest quality in all his restaurants.

The dedication he invests in sourcing products is also reflected in his culinary creations. With his dishes, Julien Royer celebrates the seasons and the skills of the people who produce the products he works with. In doing so, he led the “Odette” to a historic debut, attaining three Michelin stars and sixth place on the list of “Asia's 50 Best Restaurants 2023”. As an inspirational ambassador for closeness to nature and culinary excellence, Julien Royer is also a welcome guest at culinary events worldwide and a mentor at the “San Pellegrino Young Chef Competition.”
