Very few hotels in Switzerland and perhaps even in Europe have such an impressive history and as many original and unusual features as the Waldhaus in Sils, overlooking Sils-Maria. They are the reason why it has attracted writers, musicians and scientists ever since it opened in 1908. Theodor Adorno and Thomas Mann, for example, the guest list is long and rather unconventional. The legendary hotel with its 140 rooms and suites has just opened a 1400 m2 spa, which stunningly reflects its natural surroundings.

This winter, acting Executive Chef Fabian Marolf and Chef Pâtissier Renato Pellegrinelli will be leading the kitchen at the Waldhaus through the season at the head of a team of 22 chefs. The duo can look back on respective periods of experience at the Waldhaus numbering six and twenty-six years, and are looking to build on the achievements of their predecessors in their work with regional producers. They share the passion of preparing interesting dishes with exciting produce from our region. Their creations are rooted to the native soil in the truest sense, whilst at the same time being playfully elegant.
