Rolf Fliegauf resembles a musician at the piano in the way he plays with textures and temperatures. For a long time, he was Europe’s youngest two-star chef. Today, he is one of Switzerland’s most decorated chefs, having been awarded two Michelin stars and 17 GaultMillau points either in his Restaurant Ecco in St. Moritz as well as in the one in Ascona. Rolf Fliegauf’s “aroma cuisine” is full of surprises and combines high-quality craftsmanship with sophisticated individuality.
