He is passionate about bringing the local landscape to the guest’s plate, and his restaurant, Pinte des Mossettes, is the perfect place to do so. Tucked away in the idyllic Swiss mountain landscape of Cerniat, Nicolas Darnauguilhem has made his dream of perfect cuisine a reality. Regionality, seasonality and quality are the most important ingredients. His signature dish is a salad harvested from his own garden. Each leaf is sprinkled with a special dressing, such as fennel flower apple brandy. The flavours of the salad vary according to the season, and added ingredients from different altitudes ensure a unique taste experience.
The restaurant seats up to 24 guests. On the ground floor, jazz music plays from an old record player, while upstairs a fireplace crackles and the walls are decorated with pictures of rural scenes. They are a nod to the star chef’s roots and his childhood on his father’s farm in the south-west of France. Recalling this idyllic setting, Nicolas Darnauguilhem says: “It seems as if the whole day’s work was focused on that magical moment of eating together.” Each dish on his multi-course menus has three main components. The 43-year-old father of two has been awarded an impressive 17 Gault&Millau points, a Michelin star and a Michelin Green Star for his meticulous attention to detail in the composition of his dishes, as well as being named Gault&Millau’s «Green Chef of the Year 2025».
