When a chef’s culinary signature is influenced by his personal history, it always guarantees a very special and memorable culinary experience. This is certainly the case with Kristian Baumann. The top chef was born in South Korea, adopted as a baby and brought up in Denmark. He discovered his passion for cooking at an early age in the kitchen of a sports boarding school, started his career in a classic Danish restaurant and then began to develop his own style in various restaurants in France and Denmark. He has worked with René Redzepi and today combines Korean flavours and techniques with the minimalist aesthetic of New Nordic Cuisine like no other. Baumann regularly travels to South Korea in search of the culinary roots of his homeland. 

In April 2023, Kristian Baumann opened his restaurant KOAN in Copenhagen. His creations are a symbol of the connection between two cultures. His Korean-Nordic style had a major impact, and just two months after opening, KOAN was awarded two stars by the Michelin Guide. What a success story! Kristian Baumann is not only passionate about the products he works with, but also about a good working environment and a healthy work-life balance. That’s why KOAN is only open four days a week and one Saturday a month.
