Japan meets Italy: Kanji Kobayashi is known for his cross-cultural fusion cuisine and his unconditional commitment to regional and seasonal produce. He grew up as a farmer’s son in the heart of Japan’s countryside, became a chef and, after a stint in an Italian restaurant in Osaka, travelled to Italy at the age of 21 with a one-way ticket in his pocket. It was there that he was introduced to the Italian ‘Campanismo’ culture of using only the freshest ingredients from the local area. This philosophy made a lasting impression on him and continues to characterise his cooking today. After four years in Italy, Kanji Kobayashi returned to Japan and in 1998 opened his restaurant Villa AiDA in Wakayama Prefecture, where he grew up. He calls his concept ‘Agrigastronomy’ - a cuisine that puts vegetables at the centre. Kanji Kobayashi grows most of the ingredients in his own fields and takes only seasonal produce from the region. He uses them to create unique, Italian-inspired dishes that are firmly rooted in his Japanese culture. His creations reflect the climate of the region and the seasons, and with each dish, the chef pays tribute to the diverse culinary treasures that nature provides. Thanks to this concept and the restaurant's tranquil location an hour south of Osaka, Villa AiDA remains a culinary retreat for gourmets to this day. Highly acclaimed and honoured with numerous awards, including two Michelin stars and 14th place in Asia’s 50 Best Restaurants 2022.
