Indian-born Deepanker Khosla runs one of the world’s best and most sustainable restaurants in Thailand. At HAŌMA in Bangkok, he serves a fascinating and flavourful neo-Indian aromatic cuisine that has captivated the international gourmet scene. Social and environmental responsibility are also most important issues for this top chef. He and his team take sustainability into account when selecting ingredients, creating menus and decorating the restaurant. The aim is to minimise food waste and unnecessary rubbish. Many of the ingredients for the gourmet restaurant are grown on their own farm, which also raises chickens. Vegetables are wrapped in banana leaves and food waste from the farm is either recycled or turned into fish food. HAŌMA even has its own sustainable fish farm, which collects over 200,000 litres of rainwater each year. Deepanker Khosla’s motto is: “We grow what we cook, and we cook what we love.” The efforts are paying off: in 2021, HAŌMA received the Champions of Change award from the World’s 50 Best Restaurants list. In 2022, it received its first Michelin star, as well as a green Michelin star for its outstanding work in sustainability. The creators of the Star Wine List of the Year also named HAŌMA for having the best sustainable wine list in Asia. And in 2024, the restaurant received the Sustainable Restaurant Award from the World’s 50 Best Restaurants list.
