Guest Chef Nicolas Decloedt's cuisine is based on the 24 micro-seasons and his and his wife Caroline Baerten's restaurant humus x hortense in Brussels, Belgium, was crowned the best vegan restaurant in the world in 2019. Guest Chef Stefano Baiocco enchants guests at home in Italy at Villa Feltrinelli with his unique dishes, which he combines from 52 different tomato varieties, for example, and serves with freshly picked herbs from his own garden.
