Top chef Musa Dağdeviren is one of the best-known people in the Turkish culinary scene. His mission: to bring Turkey's rich culinary heritage closer to gourmets and create a kind of “food atlas” of the country. His passion for baking and cooking began early, at the age of five, when Dağdeviren was already helping his uncle in his bakery in Nizip. Moreover, he helped his mother and neighbours to make molasses, bulgur, phyllo dough, starch and tomato paste from plants that grew in the garden. From 1977 to 1979, he worked as a kebab cook and baker in Gaziantep and Birecik, and later ran a snack bar with two friends on the highway between Nizip and Antep. After many years of travelling, Dağdeviren moved to Istanbul, where he opened his restaurant “Çiya” in 1987. Since then, he has been cooking dishes of recipes collected from cooks and housewives in every region of Turkey, using only seasonal products from small regional producers and farmers. Apart from a few fixed dishes, the menu changes daily. Since 2003, Dağdeviren has also been a regular ambassador for Turkish cuisine at food conferences in the USA, Europe, Australia and Asia, and in 2018 he was portrayed in the popular Netflix food documentary series “Chef’s Table”. His 2019 cookbook, “The Turkish Cookbook”, serves as a reference guide to the richness of Turkey’s culinary culture. It has already been translated into German, French and Spanish.
