Even as a child, Alan Geaam dreamed of one day working as a chef in Paris. The now 48-year-old had not imagined then how difficult the road would be. Born in Liberia and brought up in Lebanon, he had witnessed two civil wars before moving to the USA with his parents at the age of ten. At twenty-four, he finally moved to the city of romance. Other than a big dream, he had hardly any money and no experience as a chef in his baggage. In Paris, he struggled along at first as a dishwasher before getting his first job on the stoves by pure chance because the chef at the bistro where he worked had cut his hand and had to drop out. Alan took his place.It was the starting signal for a distinguished career: self-taught chef Alan Geaam was to become head chef at “Auberge Nicolas Flamel” in 2007, earning his first Michelin star in 2018. Today, he owns the fine-dining restaurant “Alan Geaam” (1 Michelin star) in Paris in addition to the “Auberge Nicola Flamel”, where Grégory Garimbay is now at the stove. He also owns the Lebanese bistros “Qasti” and “Sâj,” which serve stuffed pancakes – typical Lebanese street food.
